if someone had told me last year that i'd soon be craving for salads, i would have laughed so hard. i used to hate salads! given a choice between pizza or a salad, i'd have chosen the pizza any time. no hesitation.
now? now i crave salad every day! i've come to love the crunch of the vegetables, the freshness of the flavors, and how clean the feeling is inside my tummy. i love how i never feel bloated afterwards, and i love the mix of textures and tastes. every few days i try a new combination, and so far they've all been great.
the one in the picture is my chicken fajita salad. instead of wrapping them in tortillas, i shredded the roasted chicken, mixed it with the roasted veggies, added cherry tomatoes and romaine lettuce, and mixed them all with a special dressing (sour cream, parmesan cheese, garlic, cayenne pepper, lemon juice, olive oil). it's so good!

i used to get a bad hyperacidity attack after having salads..now, my stomach is getting used to it...i guess sometimes i use too much french dressing which is soo fattening,haha=)
i love rocket salad, with eggs,tomato,goats cheese, a sprinkle of olive oil and french dressing, then smoked mackerel=)
also, i miss tita loys waldorf salad=) one fo the best ones ive ever tasted=)
hi chelo! i miss my mom's waldorf salad too! i plan to make it for christmas eve noche buena. bahala na bawal. hehehe. =D
I subsist on salad pretty much during the summer. But nowadays that it is cold here, I have a stock of canned soups. They have chicken soups that are low-sodium and 100 calories/cup but one can is 2 cups, so even at 200 calories they are still not as bad.
I like variety in my salads too. Artichokes, nuts, dried berries - cherries, raisins, I go crazy with the add ons. I don't use croutons - I prefer nuts.
hi tita lou! i prefer nuts too! i always have a supply of nuts in the fridge - pecans, walnuts, almonds, pine nuts - for my salads, and for snacking. the SB diet doesn't allow croutons, so i never use them.
and yes, i can imagine how you wouldn't want salads when the weather is cold. i'd probably go for spicy clear soup or something of the sort.
